Grilling Mediterranean Style!


Hey guys! Hope everyone had a good Monday! I know Mondays are rough. I don’t know if moms out there can relate but for some reason I am more tired after the weekend than I am on a Wednesday morning. The weekends are busy, so much to get done. There is never enough time right? Good thing we had great weather today! Like I’ve mentioned before, the weather affects me greatly. So I was very grateful for the beautiful day we had!

Today was a pretty productive day with my two youngest at home. My entrance/foyer is beyond pathetic, no really! We started remodeling the entire first floor when I was 7 months pregnant. After the baby was born we tried to do as much as we could and when we got to the point where it was livable we took a break.That was last Christmas, haha! I have a couple of low cost ideas to make it pretty and I finally got started today. Soon I will share a before and after pic.

Last night I decided to defrost some chicken and leave it marinading for some mediterranean inspired kebabs. And they were delish!! I will share my marinade recipe, hope you give it a try when you are craving some mediterranean food. It has great flavor and it is light on the calories too. Perfect for the whole family! Remember, I hate to cook with precise measurements. My motto is no pressure, no stress cooking. I think the more you wing it, the better and more comfortable you become at experimenting. You won’t always need a recipe. You will know what you like. I will do my best to list the amounts I use for the portions I made. Okay let’s get started!

Ingredients for Marinade:

  • 1 cup plain Greek Yogurt
  • 2 tablespoons Olive Oil
  • 1 tablespoon paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon crushed red pepper flakes (double if you like it spicy)
  • Zest of a whole lemon (lime is fine if that’s all you have)
  • Juice from whole lemon (same as above)
  • About a tablespoon salt
  • Ground black pepper (just eyeball it, it’s just pepper! Live on the wild side!)
  • 5 cloves of garlic, minced

For the Kebabs:

  • 4 Boneless, skinless chicken breast cut into cubes
  • Red bell pepper
  • Green bell pepper
  • Yellow bell pepper
  • 1/2 purple onion
  • Cherry tomatoes


Mix all the marinade ingredients in a bowl and add it to your chicken. Cover with some foil paper and leave it in fridge at least 4 hours. Meanwhile, cut all your peppers and purple onion into cubes (try to make them all similar in size so they all cook evenly).

When the chicken has marinated start arranging your kebabs. I just did my first kebab and copied the rest to my first one. My 6 year old helped me, so you know there is no special science to it. That’s it! My hubby put them on the hot grill and they were juicy, tender and so flavorful!

Quick Tip: If you are using bamboo skewers like I did, soak them in water for a few hours so they do not burn on the grill!

Time to grill!


Sweet corn is in season so I’ve been buying a ton! :)



I made some easy Basmati rice and that’s it! The kids loved it and it was delicious for the adults too!
