As promised, today I am sharing my favorite Salmon recipe. It is a favorite of mine because it is full of flavor, it is super easy and it is a breeze to clean up! Another reason I love this recipe is my kids love it. And let’s be honest, it’s always great to hear your kids love Salmon! Especially when all kids want now in days is fried food, lol. I make it all the time so I tried to pay attention to my measurements because I usually just wing it! Okay, lets get started!
I feed a small army so I usually make a huge portion of salmon. But you can cut the recipe in half if you want. I had an almost 3 lb. salmon. It was gorgeous! I buy it at Costco without the skin so it is super easy to just add my ingredients, pop in the oven and move on to the sides.
- 1/2 stick of butter or 4 tablespoons
- garlic salt
- fresh ground black pepper
Super easy right? I usually have the salted butter. I don’t mind it. I’m just mindful of how much garlic salt I add. But if you prefer unsalted butter, go for it. I would probably add Lawry’s salt if I was using unsalted butter. Salmon is a very meaty fish. You want to make sure you have enough flavor. I didn’t have fresh parsley so I just used dried parsley. Remember, don’t stress! :) Just cut your butter into pieces and arrange it on top of your salmon. Sprinkle your paprika, garlic salt, parsley and ground pepper over your salmon. You cant really mess it up, it will be great!
Cover it with foil paper and put in oven for 40 mins. If you are making a smaller portion just check on it after 25 mins. You will know it’s ready because the salmon has turned pink. Once your salmon is cooked, you take the foil off and put it back in the oven. It allows it to caramelize nicely rather than looking just steamed. I hope that makes sense, lol. Leave it in the oven, uncovered for another 15 mins. At this point the salmon is cooked and juicy. That’s it. Let it rest for 5 mins and serve.
For the sides, i always make pasta and steamed vegetables. I just love the combo. I used Barilla Veggie Thin Spaghetti. I boil some water, add a little olive oil and salt to the water and throw the pasta in there. Once it is cooked to your liking, I like a little bite to it. I strain it and set aside. I then finely chop 5 garlic cloves and sauté them in some olive oil. Just until they are translucent. I then throw the pasta in the pan. Turn the fire off and add salt and pepper to taste. I usually grade some fresh Parmesan cheese over the pasta. My boys love it!
