Today I am sharing a super easy, full of flavor and definitely a favorite CrockPot Recipe! I don’t cook a lot of beef, perhaps because I’m not a big red meat fan. But my husband loves beef! Lol. He is Argentine so you can just imagine how much he likes red meat :) I try to make it for him when ever I get the chance or feel inspired. This recipe is one of his favorites and mine too. Mostly because it is the easiest to make. It literally takes about 10 minutes to put together and the crockpot does the rest. Again, I cook by taste, not much of a measuring kind of girl but I will do my best to give you my measurements.
I found this beautiful 3.5 lb. Top Round Roast at Costco and immediately knew I wanted to slow cook it. Another reason I love this recipe is because it has very little ingredients and you will most likely always have them in your fridge or pantry. It looks beautiful too. You can make it for company and look all fancy. Only you will know how easy it was to make! Love it! Ha! Okay here is the list of Ingredients:
- small red potatoes (cut in half)
- baby carrots
- 1/2 white onion (chopped)
- 1 green pepper (diced)
- 10 oz. can crushed tomatoes
- 2 packages of Beef Stew Seasoning
Optional ingredients for garnish:
- fresh flat leaf parsley
- freshly grated parmesan cheese
Ready for the instructions? Put all the fresh ingredients and the can of crushed tomatoes in the crockpot along with the beef round roast in the slow cooker. Get a separate bowl and pour 2 cups of water. Add one and a half packs of the Beef Stew seasonings (I like McCormick’s the best) to the water. Whisk it together and pour over the beef and vegetables. I add a little salt to mine, just a pinch. That’s it! Turn your crockpot on and let it cook for 6 hours. It is so flavorful and the meat is tender and falling apart when it is done. I made some fresh french bread in the oven. There are so many amazing french bread recipes out there I will just link one here. If you’ve never made home-made french bread let me just tell you, it is the easiest thing ever! But if you are tight on time, grocery stores have fresh bread all the time so don’t hesitate to just pick some up. I do that all the time! To garnish I chop some flat leaf parsley and grate some parmesan cheese and that’s it! Seriously, one pot to clean up and so easy to make!
