Pasta with Sausage

IMG_8073As I mentioned in my last couple posts, I am crazy busy this summer! I remember hearing people tell me, if you can have three kids, you can have ten! Well, they were lying! Haha! For me, three was a breeze. Four is a whole different story. Don’t get me wrong, I love being a mother and there is nothing else I would rather do than to be a stay at home mom, raising my kids and getting to be right in the middle of it. It’s different because there really is no time for anything other than taking care of them. At least for me that’s how it is. I am very involved with them. In the moment. I don’t want to miss a thing. Sure I could choose to not give so much, but I would hate to lose the opportunity that I only get to experience once in life. See, I’m busy, but I love it. I just don’t have time for anything else other than them. I know it is just a season so I cherish it. Soon school will start and I will be at home with just the baby. It is so worth the sacrifice! :) For some reason today I had a pretty chill evening with them. They were all busy doing something and I was able to cook dinner and actually take some pictures! I wanted to share this recipe because it is super easy and so flavorful! Hope you guys enjoy it and give it a try! I will list the ingredients as I go. Let’s get started.

IMG_8064I started by boiling some pasta. I had Rotini on hand so I used half the box (8 oz.) Cook it until tender, just make sure you leave a little bite to it because you will sauté it again.

Meanwhile, you are going to mince 5 cloves of garlic (yes I said 5! lol. I love garlic.) Sauté the garlic in about 5 tbsp olive oil and half a stick of butter.

IMG_8066I used this sausage because it was skinless and I don’t like the skin in sausage, but feel free to use whichever sausage you like! :) I cut into pieces three of the sausages. The pack brings six so I can make it again another night.

IMG_8068You are then going to brown the sausage lightly. The smell is a-ma-zing!

IMG_8065I then chopped up some bell peppers. I had red, yellow and orange peppers. I cut them in small, long pieces because I know my kids will eat them like that. But chop them up however you like best. I also had some fresh broccoli so I chopped some up in pieces I knew my kids would eat too.

IMG_8069Add it to the pan and just mix all the ingredients together. Making sure you coat the veggies in the olive oil and butter. I added a little salt but not too much since I used salted butter. You can add to your liking. You can also add pepper. I didn’t because my monkeys sometimes don’t like it too much.

IMG_8070This is when you add the pasta. I lowered the fire from a medium heat to a low heat and covered my pan. That way the vegetables can steam and cook a little.

IMG_8071I had some Parmigiano-Reggiano cheese on hand. This is the brand I used.

IMG_8072I turned the fire off and put the pan to the side and grabbed a handful of the cheese and poured it on top of the pasta. It melted in seconds since it was hot.

IMG_8073That’s it! It was so delicious and super easy to make! I love this recipe because it tastes great cold too. No fuss, super flavorful and you can make it as healthy as you would like.
