Breakfast Tacos

 I’ve been wanting to share this next recipe for a while now. It is one of my favorites. My husband makes these tacos whenever he can for us and I love them! It is super easy and they are delicious! Breakfast can get pretty repetitive when you have a large family  so it’s always nice when you mix it up. Just hearing a new idea can get you thinking creative again ;)

Start off by making scrambled eggs. However you normally make them. I add a little splash of milk and lawry’s salt to our eggs. My family loves them. I also cook some sausage on a pan. We love Beef Summer Sausage, so when we can find it I buy it in bulk, ha! After frying it I cut it up in bite size pieces.


Next you are going to cut up some tomatoes, onions, green peppers and a ton of cilantro. I add a splash of lime juice but if you are not a fan, it taste great without it too.

  
Meanwhile, I cook our corn tortillas in a pan with a little oil. You can use any oil you like to cook with. The tacos taste best with the tortillas fried but you can always just microwave them. You can also use flour tortillas or whatever you like best. Give it your own twist. Whatever makes you happy, remember there’s no rules in your kitchen!


Once you have your tortillas ready, just start assembling your tacos. Once I arrange them, I add a little cheese over them. I had Parmesan so that’s what I used. Usually I add Queso Fresco or Feta but we were out. That’s it!


They are warm and fresh and so delicious! Super easy right? Hope you give it a try!
